According to the US National Library of Medicine, eating bugs can induce a cytokine storm within your immunity system (just as their covid does): “Chitin is a structural component in cell walls of the exoskeleton of insects and crustaceans. In keeping with the basic rule of survival, the self-origin (own body component) chitins and chitinases are protective, but that of non-self origin (from other organisms) are detrimental to health. The exogenous chitins and chitinases provoke human innate immunity to generate a deluge of inflammatory cytokines, which injure organs (leading to asthma, atopic dermatitis etc.), and in persistent situations lead to death (multiple sclerosis, systemic lupus erythromatosus (SLE), cancer, etc.)

  4. My Swedish great grandmother was a FABULOUS cook, and an even better baker. She also had a wicked sense of humor and could cuss a blue streak when the mood called for it. I can only imagine what she’d say about Swedish bug larvae in her barley.

  7. Do they think that “bug larvae” markets better than just “bugs”? Alarmingly like selling mutton dressed as lamb, isn’t it?
    Yet it could work. “Are these bugs artisanal?” “Even better They’re larval!”
