With more lockdowns looming in the not too distant future, the inability to find staff may wind up being the least of a dining establishment’s worries. In the meantime, the struggle continues with governments doing their best to make a bad situation worse.

a number of restaurants shut down their locations, and moved to a commercial kitchen setting where they are sharing space with a number of other restaurants on a hourly basis, thus surviving on the delivery model.
it’s probably not sustainable long run, but who knows.

I also read that in one community the restaurants refused to serve unvaxinated patrons. They changed their minds a few weeks later when a number of them went broke.

There is FREE higher education in Denmark. There is also a huge number of 38yo college students … who never really “launch” into adulthood. Nobody in Denmark is much motivated to do much of anything

Where I live in the US, there are plenty of restaurants and bars with “help wanted” signs. But there are also places proudly announcing proof of vaccination as a requirement for people to enter. Most other places are back to “masks for all”.
And the people they have retained are burning out like a blue angel in a windstorm.

A couple of local pubs have cut back hours due to staff shortages, it’s not due lack of workers tho. Who wants to work in an industry that the guberment can and will shut down at any given moment with no notice? Granted they did it to everyone but the service industry was the hardest hit.
Better to get a “essential worker” job at your town, county, state, federal, or wholly contracted “private” gov trough contractor.
In at 9, out at 3, days off up the ying yang, breaks, lunch, break, parental leave, personal development day at the pub, work from home day, copier fiddling, zenning out during equality, race, aggression, sensitivity lectures.
After a while, roll out of the office chair and apply for disability pension…
