Porcupine. Damned fine stuff.
The only Hors d’œuvres (that’s french for whores’ ovaries) that I know that come with their own toothpicks.

I remember being taught as a child that we should leave the porcupines alone, since they are (ostensibly) the only animal easy to catch and eat if one is ever lost unarmed in the woods. Apparently you can flip them over with a stick and beat them to death. I guess they would be pre-tenderised that way.
Wonder if my mom just made that up so we wouldn’t torment the poor creatures…
Hi Turtle, I got the same advice on an Air Force survival course. There is a great recipe for porcupine in the “Northern Cookbook” (got ours from the Queen’s Printer years ago). If you don’t have porcupine you can use pork, so the porcupines haven’t been eaten in our household.

Yes he is the “dust my broom” guy. Come’on Sean – how’d you cook it up? I’d bet deep fried in a Tempura batter would be awesome, just a little counter productive though! Or stroganoff or stew or stir fry or hmmmm just about anything…
