  5. If you like pickled eggs.

    Ingredients
    12 large eggs – room temperature
    Vinegar – 1-1/4 ups
    Water
    Salt
    Black pepper
    Onion Powder
    Garlic powder
    Pickled jalapenos

    Tools
    A big sauce pan – I call it a pot
    A large frying pan
    A 4 liter measuring cup
    A 750ml canning jar or wash out a pickle jar
    Tongs with silicon grips
    Cutting board

    I was buying pickled eggs as part of my morning break snack, but they were hard as golf balls.
    My girlfriend told me to make my own or quit belly-ackin.
    Problem?
    Peeling them.
    I tried all kinds of tricks and methods and finally got it timed with about a 99% peel rate success. And the egg is almost a creamy consistency.
    I have made dozens of successful batches over the years.
    Total time: just under 1 hour.

    Fill the big pot with 3 liters of water and bring to a vigorous boil.
    Tong in the room temperature eggs and boil for 3 minutes – if you have an egg basket to put them in all at once that’s good.
    Take the pot off the heat and put the lid on partially.
    Wait 9 minutes.
    Mind your hands and dump the water out completely leaving the eggs in the pot and fill with 3 liters of cold tap water.
    Wait 15 minutes.
    While you’re waiting put 1-1/4 cups of vinegar and 1-1/4 cups of water into a large fry pan.
    Add a lot of salt – several pinches – I just use my…liberal, heh, salt shaker.
    Ground or shake in a lot of pepper. At least a pinch.
    A couple of shakes or a small pinch of garlic powder.
    A pinch of onion powder.
    5-6 slices of pickled jalapeno.

    When the 15 minutes is up, drain the water completely and add another 3 liters of cold tap water for another 15-minute bath.
    Put the frying pan on medium-low. My elements go to 7 – I put it on 3. You want to simmer the brew for about 10 minutes.

    When the 2nd 15-minute bath is up, drain the water and leave the eggs in the pot.
    Take the pickled brew off the heat.

    On the cutting board I tap each egg enough to crack it a bit. They should peel easily.
    “They” say older eggs are better. I don’t know who “they” are.
    I quickly rinse each egg with warm water to ensure there is not left-over shell stuck to it.
    When you have 6 eggs peeled and in the jar, carefully pour the pickling brew from the frying pan into your big measuring cup.
    With your tongs, pluck out the 5-6 jalapeno slices and put those into the jar with the eggs.
    Then fill the jar up to the height of the eggs with the brew.
    Peel and place the remaining 6 eggs inside the jar. It will be a tight squeeze, but they do all fit. (Using a 1 liter jar would be better, but I haven’t yet.)
    Put the lid on.
    I let the jar sit for a while before refrigerating.

    I strongly recommend the boil & rest times and using a loud annoying timer. As for the pickling brew, you can add or subtract to taste. I’ve tried red peppers instead of jalapeno and that was good. Slices of onion instead of powder. Same with garlic. I tried fresh dill once instead of the pepper but I didn’t use near enough and I thought I used a lot.

    Will try your suggestion regarding brew machines, the “Areopress” has an excellent review from consumers. Price point at Bed Bath and Beyond is reasonable and small size a bonus.

    Irrelevant is my choice of brew, a cup of (VanHoutte) Dark Columbian Coffee since the Aribicas are a bit bitter imo., but, yum, will drink any coffee to try.
