    2. Having lived in the Maritimes for almost 20 years, I learned to make Meat Pies the Acadian way. This recipe below is close to what my Acadian pal taught me except that the cooked potato is cubed in small bits and added in sparse amounts to the shredded pork/beef mixture. Western Canadians love pulled pork, the look is similar. Was taught to use Tenderflake lard for the crust. No substitutes, follow the recipe on the package. Spices, changed to omit ginger but S and P, onion and garlic to taste, is perfect.

      Le French Quebecois pie is not my preference due to the spices as per tradition. Hungry Christmas revelers don’t care, it’s all good. Don’t forget the egg nog. Here’s a great recipe– I like the explanation given about moistening the meat mixture properly, it’s very important not to have a dry pie, nor a soggy one.

        2. My French mother used to make the meat pies every Christmas. They are very high calorie, somewhat greasy, and you smother it with ketchup. It’s a meat pie …. your aorta will not be happy.

          I never really like the meat pie …. I preferred the turkey and stuffing with cranberry sauce.

      3. I’m a big fan of meat pie and cooking with lard.

        When I was a kid we used to go fishing with 2 things – a cast iron frying pan and lard. My old Mom used to lament about the quality of the lard we get today. She claimed it never measured up to the lard they used to render.

        I read once that adding potatoes to a tourtiere was a sign you were poor. You couldn’t afford a straight meat pie.

        1. A sparse amount of cooked cubed potatoes helps to thicken the meat mixture. So, just a bit is good.

          (Abt –Your Mom sounds like mine. I’m longing for a good fish fry and for a feed right now!)

        2. Commercial lard has a small component of air whipped into it before packaging. Kind of like soft ice cream. Maybe that’s the difference. By volume it’s slightly less greasy.

      Peckford seems like a decent fellow, he perhaps believes his own bullshit regarding the Turdhole Charter. He is however misleading Canadians into believing the Courts will save them from the lawless tyranny of the Globalist Turdhole/NDP Regime.
      They won’t.

      As I have stated in the past when this subject comes up. Peckford and Bernier are wasting everyones time and frankly I find it hard to believe that they don’t know that. Regardless, if the Turdhole Charter was going to save Canadians from the rogue lawless Globalist ruling over Canada it would’ve already happened… it hasn’t happened for a reason and it won’t happen.

      Think. Would these lawless Globalist rulers who rule the Federal Government and every Provincial Government impose and enforce their lawless “great reset” dictates, scrapping the Nuremberg Code, discriminating against anyone who doesn’t go along if they thought that at some point the Courts would step in and correct their lawless behaviour ?
      Not a chance.
      The Courts are just as corrupt as the Turdhole/NDP Regime, they are not a corrective agent against Liberal/NDP lawlessness they are a facilitator of that corruption, a voyeur to government lawlessness.

      This case as I stated before will never be heard in a “court”.
      The Turdhole Charter is a useless document as far as individual liberty is concerned, as designed. It fools people into believing they have “guaranteed rights and freedoms” that protect them from tyrannical lawless Governance.
      The only good thing that will come out of Mr. Peckfords case is the mass realization that the Turdhole Charter is a document of the Government by the Government and for the Government and it completely corrupts the Courts and the whole legal community.
      Every “constitutional lawyer” in the country knows it and soon all Canadians should know it too.

      The Courts are part of the lawlessness not a solution to.
      The Turdhole Charter explicitly and deliberately corrupts the Courts.

      The “Courts” will behave exactly the same way the Cops behaved and do exactly what the corrupt politicians tell them to do.

      Corruption reigns at every level or this lawlessness wouldn’t have happened in the first place.

  18. I sent an email to a charity that supports children in the third world a while back asking what they thought of Trudeau’s plan to restrict Canadian farmers food production and how much starvation that would cause in the third world.
    I got an intelligent and well thought out response.

    They keep out of politics which is one of the reason I support them, and my email was more to alert them to Trudeau’s madness than to get any concrete answers. My intention was to make sure that these charities know what is going to happen to our food production and exports.

  22. I like to make it for New Year’s Day, a traditional fare, I like Moose, Board and Beef.

    1. Besides pork and beef I also tried rabbit meat to the mix back in the day. Preferred it without, but others loved it. The last time I made these pies was in ’99, — but thanks for the nutmeg tip. Sounds good. Like Steakdude I’m more into the paleo diet now for the most part, otherwise I’d be 5×5. No way to allow that! Your New Years day pie sounds good tho’ — and wickedly yummy! Just a tiny slice, please!

          Thanks for link, will watch the rest. I actually saw the first episode on TV and enjoyed it. I’ve always enjoyed Stanley Tucci as an actor too.

          My go-to favourite Italian recipe is from my old cookbook, ITALIAN GOURMET COOKING by Master Chef Pasquale Carpino. His Chicken Cacciatore is terrific. Of course it doesn’t hurt that there’s 4 oz of white wine and 2 oz of brandy to the 3 lbs of cut up chicken. Just stick that booze in and they’ll thank you!

          1. Wife makes homemade pasta…gnocci’s, Sauce n eggplant Infused meatballs.

            Said meatballs are phenomenal….(eggplant, skinned and cut up into very small, pces, boil till soft, then squeeze as much water as you can from them add in 1-3 ratio eggplant to ground beef..mixed well.)

            The utterly moistest meatballs you ever ate….(she freezes small chunks of mozzarella and puts those inside the meatballs prior to going in the oven all covered with her red tomato sauce.)

            Mmmmmmm good.!!
